INGREDIENTS:
1/2 lb baking flour
1/2 lb salted codfish
2 stalks scallion, chopped finely
1 tsp thyme
1 tbsp seasoning salt
1/2 tsp baking powder
1/2 hot pepper, chopped
cold water, about 1 cup, or as needed
1/2 cup olive oil (oil of your choice)
PREPARATION:
- Boil codfish for at least 5 minutes to get rid of excess salt, drain and run cold water over codfish again then break into small pieces.
- Pour flour in a bowl.
- Add seasoning salt, baking powder and mix thoroughly.
- Add chopped scallion, thyme leaves, hot pepper (optional) and mix well.
- Then add enough water and mix into a medium batter.
- Heat frying pan with olive oil, use a spoon to scoop batter and place gently in oil, fry on medium heat, turning codfish fritters when each side becomes golden brown or fully cooked.
