Switzerland: Swiss Cheese Pie

INGREDIENTS:
Pie Crust (made from flour, shortening, salt and water )
3/4 cup Gruyere Cheese
3/4 cup Emmental Cheese
2 tablespoons flour
3 eggs
1 cup of cream


PREPARATION:
Shred cheese into a bowl, and with your hands, mix in the flour (flour will help it rise).

Add cream, eggs, salt and pepper into a blender and pulsate for 30 seconds.

Smooth butter onto surface of pie pan and lightly dust with flour, then add your crust to the pan.  Mold the crust to the pan.  Polk several holes in the crust.

Add the cheese / flour mixture to the pie crust.  Pour the cream mixture throughout.  Add salt and pepper.
 
Bake at 400F degrees F for 15 minutes.  Reduce heat to 325F degrees and bake 30 more minutes or until a knife inserted in center comes out clean.
