Nigeria: Jollof Rice

Ingredients:

1 ½ cups white rice

1 pound of cooked cubed beef

2 tomatoes chopped

1 onion chopped

1 bell pepper chopped

3 maggi cubes

2 cups rice

3 tablespoons of vegetable oil

 

 

Preparation:

In a large pot, heat oil.  Add tomatoes, onions, peppers and beef.  Allow to simmer for 5 minutes.

 

Add 2 cups of water, maggi cubes, rice. Bring to a boil, then reduce heat to low. Cover, and simmer until the rice is cooked, 25 to 30 minutes.

 

Serves 8
