INGREDIENTS:
1 whole chicken cut up into small pieces
6 cloves garlic
1 thumb size piece of ginger
2 scallions
3 sprigs of thyme
1 small piece of scotch bonnet pepper
2 tablespoons of curry powder
1 teaspoon ground ginger powder
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon of chicken seasoning
2 teaspoons seasoning salt
6 pimento seeds
Salt and black pepper
3 tablespoons of olive oil
1 large onion (chopped)
1 cucumber
PREPARATION:
Wearing rubber gloves are suggested when preparing this dish. Place chicken pieces in large bowl. Add the spices, peppers, 2 garlic cloves, 1 tablespoon of curry powder, and all other seasonings.
In large frying pan, pour in enough oil to cover the bottom of the pan. Add 4 cloves of garlic and 1 tablespoon of curry powder. Once the oil is hot, add the chicken curry mixture, 1 chopped onion, cucumber and butter. Cover pan and let cook for 25 minutes, stirring intermittently.
