Italy: Zeppole

INGREDIENTS
1 1/2 cups flour
1/2 cup water
1 teaspoon yeast
2 quarts vegetable oil for frying
Powdered sugar


PREPARATON
Heat oil in a deep fryer to 375 degrees F.

Mix the flour, water, yeast into a bowl.  Allow the yeast to rise for one-hour.

Pull off small pieces of the dough and carefully drop into hot oil in batches.  Turn the zeppole once or twice, cooking until golden and puffed up – for about 5 minutes.

Drain on paper towels.  Sprinkle generously with powdered sugar and serve at once.
