INGREDIENTS:
2 beets
1 cup of plain yogurt
Salt to taste
PREPARATION:
Place beets in a pan, add a cup of water, cook on medium heat for approximately one hour or until the beets become soft. Remove from pan and allow the beets to cool.
Remove the beet skin and cut into small cubes.
Mix with yogurt and add a dash of salt. Mix well. Keep overnight in refrigerator to allow the beets to color and flavor the yogurt.
Serve cold.
