INGREDIENTS:
4 zucchini
6 tablespoons olive oil
2 small onions finely chopped
2 eggs
2 tablespoon bread crumbs
14 ounce ground beef
grated parmesan cheese
1 beef bullion cube
PREPARATION:
Preheat oven to 350F degrees.
Boil zucchini in a pot of water for 14 minutes.
Slice zucchini in half – lengthwise. Carve out the fruit and set aside. Place zucchini flat in bakeware.
In frying pan, add olive oil, onions, and the bullion cube until cube is soft and mixes nicely with the onions. Add ground beef to the mixture until cooked. Add one egg, bread crumbs, zucchini fruit. Continue to cook for 5 minutes. Remove from heat.
With spoon, add mixture to hollowed-out zucchini halves until stuffed. Sprinkle parmesan cheese on top.
Bake for 45 minutes. Serve nice and hot.
