Albania: Tava Elbasani (Lamb Caserole)

INGREDIENTS:
3 pounds of boiled lamb, cut into medium sized pieces
lamb broth (from the boiled lamb )
2 tablespoons of butter
2 tablespoons of olive oil
2 eggs
3 cups yogurt
2 tablespoons flour
1 tablespoon rice
salt
pepper

PREPARATION:
First, boiled the lamb meat with a little pinch of salt. Take it out at let it cool.  Place lamb inside large roasting pan.

Heat a frying pan with olive oil, flour and butter.  Stir until mixture is a golden brown.  Add 1/4 cup of the lamb broth and allow it to cool.


Whisk the eggs, adding rice, salt and pepper.  Add the egg mixture to the yogurt and stir.  Once mixed add the gravy mixture to the yogurt and continue to stir. 

Once combined, pour the entire combination over the lamb.  Cook in preheated oven (350F) for 45 minutes.

Serve immediately
